Clean Eating Egg White Muffins

 
The awesome thing is that you can throw in any veggies that you like (I'm thinkin' asparagus) or spices (basil, garlic etc) you want to get the taste you desire!  This is a versatile meal that can be eaten on the go or at home, for breakfast, a snack lunch dinner, or before bed!

 

Ingredients

  • 8 egg whites
  • 1 whole egg
  • 1/2 cup chopped spinach
  • 1/4 cup chopped red and green peppers
  • 1/4 cup onion
  • 1/2 cup mushrooms chopped
  • pinch of mrs.dash seasoning
  • 3 tbsp salsa (optional)

Instructions

You can either blend all ingredients in a blender or you can chop up your veggies very finely with a chopper.  Spray muffin tray with extra virgin olive oil cooking spray or any non stick cooking spray.

Cook at 350 degrees for 10 to 15 minutes or until firm.

Let cool for about 10 mins before eating!!!
